Does it matter how fibrous foods are cooked and prepared?

Fruits and vegetables should be prepared with skin on, and should be cooked lightly or not at all.

Because most of the insoluble fiber is found in skins of fruits and vegetables, it’s important not to remove the skin unless absolutely necessary. Overcooking vegetables may break down some of the fiber, so it’s best to eat raw or lightly cooked vegetables and fruits.
