Cycloalliin

Cycloalliin

Cycloalliin is an organic sulfur compound found in the onion plant. Onions exert hypoglycemic properties on humans and are antifungal. Cycloalliin is one of the compounds not acted upon by the enzyme alliinase when the onion is injured. Other compounds, such as alliin, are cleaved by alliinase into simpler compounds.
