Emulsin (Beta-Glucosidase)
Emulsin (beta-glucosidase) is an enzyme which splits amygoalin and other beta glycosides. Emulsin is found in almonds, wild cherry bark, and many other plants. It is also found in humans, where it is responsible for the breakdown of glucocerebrosides. The lack of this enzyme can result in mental retardation.
