Description
Beef liver, one of the most concentrated sources of vitamin A in the animal kingdom, is also very high in riboflavin, vitamin C and copper, unlike most other cuts of beef. Beef liver is also much lower in total lipids than other cuts of beef.
Beef liver's two documented negative aspects are its tremendous cholesterol level (approximately five times the amount in flank steak, an exceptionally lean cut), and its high sodium content.
