Description
Veal liver, as an organ meat, contains far greater amounts of all nutrients (except calories and cholesterol) than any other part of the calf; this is particularly true for vitamin A and iron. It is also the only organ containing vitamin C. As with all livers, veal liver is an ultra-concentrated source of cholesterol. Therefore, it should not be eaten if on a Low Fat Diet (Pritikin) or Low Fat Diet (Non Pritikin).
