Kombu
Description
Kombu, a type of edible seaweed. Kombu contains very high levels of calcium and iron, is a good source of niacin and phosphorus, and a fair source of provitamin A carotenoids. However, because kombu is a highly concentrated source of sodium, it should be avoided by persons on Mild Sodium Restriction Diet, Moderate Sodium Restriction Diet or Severe Sodium Restriction Diet.
