Description
Duck, any fowl of the Anatidae family. Like chicken, duck is an excellent source of complete protein, niacin, phosphorus and potassium; it is also a moderate to very good source of vitamin E, biotin, pantothenic acid and vitamin B-6. Duck contains almost twice the amount of lipids found in chicken. It is also higher in iron and folic acid, but lower in niacin than chicken.
