Description
Chicory greens, the leaves of the blue perennial composite herb Cichorium intybus. The plants are grown in darkness or semidarkness to blanch them for use as a salad. The endive plant Cichorium endivia is a close relative.
Chicory greens are an excellent source of provitamin A carotenoids, vitamin C and potassium.
