Description
Sauerkraut, sliced or shredded cabbage in a solution of vinegar, brine, and sugar. Sauerkraut contains appreciable amounts of potassium and vitamin C. However, because of its brine solution, it is very high in sodium and should be avoided by persons on Mild Sodium Restriction Diet, Moderate Sodium Restriction Diet or Severe Sodium Restriction Diet.
