Maintenance Diet

Description

An allergy-free diet has two components: the identification of specific food allergens in the diet, and thereafter the allergen-free maintenance of the individual on a day-to-day basis.

To identify the allergy-inducing foods, an elimination diet, or avoidance diet, is begun. Once the offending foods are identified, the maintenance diet can be designed accordingly.

What is the maintenance diet?
The maintenance diet is created for the purpose of avoiding foods which have been identified as allergens using the elimination diet.

The "Hypoallergenic Cookbook" section provides recipes which already omit one or two common allergens. If necessary, these recipes can be customized to an individual's particular dietary requirements. Simply substitute an equivalent amount of a nonallergenic "allowed" food for an allergy-provoking ingredient. For example, nut milk can be substituted in a recipe that calls for cow's milk by someone who is sensitive to dairy products. The quantities of some substitute ingredients, such as flours and sweeteners, might need some adjustment to duplicate the taste or consistency of the original hypoallergenic recipe.

Use as many different substitutes as possible. If allergic to wheat, try using buckwheat, amaranth, tapioca flour, nut flour, etc., rather than solely using rice flour. Eating rice flour on a frequent basis might induce the development of an allergy to that ingredient.

Finally, continue using the food diary that was started during the elimination diet. After major food allergens are identified and removed from the diet, minor and less obvious food allergies may detected through this record-keeping method.
