Protein Enriched Diet

Description

The Protein Enriched Diet is elevated in protein from both animal and vegetable sources and exceeds the Dietary Goals recommendation of 15% of the calories as protein. It is designed to provide more than 1 gram of protein per kg (2.2 lbs.) of body weight and provides 120 grams of protein in nearly 3,000 calories of food intake.

The Protein Enriched Diet is used to treat protein malnutrition and patients in hypermetabolic conditions such as burns, fractures and some fevers. It is also used to manage some forms of reactive hypoglycemia which are not responsive to the high complex carbohydrate approach - see Carbohydrate Intolerance Diet. This diet is commonly used before and after surgery to promote wound healing, increase resistance to infections, and to protect the liver against the toxic effects of anesthesia.

The Protein Enriched Diet supplies more than adequate levels of all nutrients as established by the RDA's. However, individuals with kidney disease or liver dysfunction may not respond well on this diet because of elevated protein intake. If additional protein is required within a limited caloric level, non-fat milk or dehydrated milk can be added to such foods as mashed potatoes to increase the protein level. One and a third cup of non-fat dry milk to milk will double its protein content.

Menu for One Day

Breakfast
1/2 c orange juice
1 tsp margarine or butter
1 egg (any style)
1 tbls jelly
1/2 c cooked oatmeal
Hot, noncaloric beverage
1 c whole milk - fresh
1 slice toasted whole wheat bread

Lunch

4 oz sliced turkey breast2 slices whole wheat bread
Sliced lettuce and tomato1/2 c steamed carrots
1/2 banana1 c whole milk - fresh
2 tsp margarine, butter, or mayonnaise



Mid-Afternoon Snack
1/2 c grape juice

Dinner

5 oz broiled halibut1 c dark whole buckwheat (kasha)
1/2 c steamed broccoli1 slice whole wheat bread
4 apricot halves (no sugar)1 c whole milk - fresh
Hot, noncaloric beverage2 tbls oil and vinegar dressing
1 c salad: romaine or Boston lettuce; sliced carrot, cucumber, mushroom, bell pepper, celery



Bedtime Snack

1 c whole milk - fresh1 slice whole wheat bread
1 tsp margarine or butter
