Alliinase
Alliinase is an enzyme found in garlic. Alliinase binds to alliin, causing it to split and thereby producing allicin, from which the odor of garlic arises.
Alliinase itself does not exhibit any antimicrobial activity whereas allicin is antibacterial and antifungal.
